This simple Shirazi salad recipe is a delicious side for any dish! This salad pairs perfectly with Middle Eastern or Mediterranean-inspired dishes.

- 1 English cucumber or 3–4 Persian cucumbers, diced
- 4 Roma tomatoes or 1–1.5 cups grape or cherry tomatoes, diced
- 1 small or 1/4–1/2 large red onion, diced
- 3 tbsp finely chopped fresh mint
- Juice of 1 lemon
- 1 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt & pepper
Instructions
- Place the diced cucumber, tomato, and onion in a bowl and toss.
- Add fresh chopped mint, lemon juice, olive oil, salt, and pepper. Toss everything together.
- You can serve this salad right away, or if you have time, cover and let the vegetables marinate in the refrigerator for 30 minutes to 1 hour to let the flavors meld.
