Sausage and Burrata Sheet Pan Gnocchi

Description

This easy sheet pan dinner is the perfect meal to make for a lazy weeknight meal! It’s comforting and filling and it tastes like pizza in a bowl! This dish takes very few ingredients and just a few minutes to prep, with mostly hands-off cooking.


Ingredients

  • 1 16oz package shelf-stable gnocchi
  • 1 pint grape or cherry tomatoes
  • 2 tbsp olive oil
  • 2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1lb hot Italian sausage links, casings removed, cut into bite sized pieces
  • 1 ball burrata cheese


Instructions

  1. Preheat oven to 425ºF.
  2. Line a large baking sheet with aluminum foil. Spread out the gnocchi and tomatoes onto the baking sheet. Add oil, salt, pepper, and oregano and toss until gnocchi is coated in the oil and seasonings. Add the sausage to the pan.
  3. Bake for 15 minutes, then remove from the oven and stir. Return to the oven to cook for another 15-20 minutes.
  4. Remove the sheet pan from the oven and immediately rip up the ball of burrata, spreading the creamy curds and cream onto the baking sheet and ripping up the outer mozzarella sack into smaller pieces. Stir the cheese into the gnocchi, tomato, and sausage until a creamy sauce is made from the burrata and burst tomatoes.
  5. Serve and top with grated parmesan and fresh basil or parsley and enjoy!
