Sausage and Burrata Sheet Pan Gnocchi
My absolute favorite lazy dinner is this sheet pan gnocchi with hot Italian sausage, tomatoes, and burrata! All you need is an oven, a large sheet pan, and some aluminum foil (for and easy cleanup dinner) and four simple ingredients with some seasonings to make the most delicious, easy, hands-off dinner you’ll ever have!

We are all lazy sometimes, and at the end of a long day, making dinner can seem like a very overwhelming task. Whenever I’m feeling tired and unmotivated to cook, one of my favorite things to make is this sheet pan gnocchi with Italian sausage and burrata. The tomatoes burst in the oven and the creamy inside of a ball of burrata melt so perfectly together to make a creamy tomato sauce. All of the flavors combine to make this incredibly easy pasta dish that tastes like pizza in a bowl! It’s a great Trader Joe’s meal, too! Everything from the gnocchi and burrata to the sausage and tomatoes came from Trader Joe’s but of course you can find all of these ingredients at your local grocery store.
Sheet-Pan Dinner with Gnocchi, Sausage, and Burrata
My mind was blown the first time I made a sheet-pan meal with gnocchi. Shelf-stable gnocchi doesn’t need to be cooked before going into the oven. As long as there are other ingredients on the sheet pan that create some steam and moisture, the gnocchi cooks up perfectly without drying out or getting too crispy. This sheet pan gnocchi is tossed in olive oil and roasted with tomatoes, which burst as they roast, so the combination of oil and tomato juice help to create the steam and moisture needed to make these perfectly cooked gnocchi!

Ingredients for Sheet Pan Gnocchi
- Gnocchi: Use the shelf-stable gnocchi you find in the pasta aisle of the grocery store. No need for frozen gnocchi!
- Tomatoes: I used heirloom tomatoes, but you can use grape or cherry tomatoes, too!
- Sausage: I recommend Hot Italian Sausage for a little kick, but you can use mild or sweet, too!
- Burrata: Burrata is an incredible cheese made by filling a mozzarella sack (the solid outside of the burrata) with stracciatella (the creamy inside of burrata). The creamy inside melts perfectly into a decadent sauce for this delicious gnocchi dish!
- Oregano: You can use dried basil or Italian seasoning, too. The oregano gives this dish a bit more of that “pizza” flavor!
- Olive oil: You’ll want to toss your ingredients in olive oil before cooking so the gnocchi isn’t too dry and doesn’t get burned in the oven. The combination of oil and burst roasted tomatoes perfectly cooks the gnocchi without drying out.
How to Make Sheet Pan Gnocchi with Sausage and Burrata

- Prepare your sheet pan. Line a large baking sheet with aluminum foil. Spread out your gnocchi and tomatoes and toss in oil.
- Add spices. Add salt, pepper, and oregano to the gnocchi and tomatoes and toss.
- Cut up sausage. Remove the sausage from its casings and cut into small gnocchi-sized pieces. Spread out onto the sheet pan.
- Bake. Bake at 425ºF for 15 minutes, then remove from the oven and stir. Return the sheet pan to the oven for another 15-20 minutes.
- Stir in burrata. Rip up a ball of burrata, ensuring you rip up the outer mozzarella sack into smaller pieces. Stir the cheese into the gnocchi until a creamy sauce forms and the mozzarella begins to melt.
- Serve. Serve with grated parmesan and some fresh parsley and enjoy!
Recipe Variations and Substitutions
- Make it vegetarian. Instead of pork sausage, use a plant-based Italian sausage!
- Swap the sausage. If you’re not a fan of pork, you can often find an Italian turkey or chicken sausage at many grocery stores.
- Add more veggies. You can stir in some spinach once the sheet pan gnocchi comes out of the oven. You can also add zucchini to the sheet pan to roast alongside the tomatoes for some added vegetables. Just cut the zucchini into half moon shapes.
- Swap out the pasta. If you’re not a big gnocchi fan, you can roast the sausage, tomatoes, and any other veggies together, then when it’s done, combine it with your favorite cooked pasta and stir in the burrata!
Storing and Reheating
Store leftovers in an air-tight container in the refrigerator. You can reheat in the microwave or add to a pot over medium-low heat with a splash of water. Cover and reheat, stirring occasionally, until gnocchi and sausage is warmed through.

Ingredients
- 1 16oz package shelf-stable gnocchi
- 1 pint grape or cherry tomatoes
- 2 tbsp olive oil
- 2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1lb hot Italian sausage links, casings removed, cut into bite sized pieces
- 1 ball burrata cheese
Instructions
- Preheat oven to 425ºF.
- Line a large baking sheet with aluminum foil. Spread out the gnocchi and tomatoes onto the baking sheet. Add oil, salt, pepper, and oregano and toss until gnocchi is coated in the oil and seasonings. Add the sausage to the pan.
- Bake for 15 minutes, then remove from the oven and stir. Return to the oven to cook for another 15-20 minutes.
- Remove the sheet pan from the oven and immediately rip up the ball of burrata, spreading the creamy curds and cream onto the baking sheet and ripping up the outer mozzarella sack into smaller pieces. Stir the cheese into the gnocchi, tomato, and sausage until a creamy sauce is made from the burrata and burst tomatoes.
- Serve and top with grated parmesan and fresh basil or parsley and enjoy!
