Easy Buffalo Chicken Bites

Listen, I’m not even a fan of buffalo sauce. but my girlfriend LOVES it, so what she wants, she gets. We just took our first trip to Costco recently (and we got a little baked in the parking lot lol) and picked up these Just Bare Lightly Breaded Chicken Breast Chunks and oh my god, they are SO GOOD! First of all, going to Costco with the munchies is a dangerously expensive experience. Second of all, going to Costco is a dangerously expensive experience, period. I think we bit off more than we could chew 😂.
Satisfy the Munchies with Buffalo Chicken Bites
ANYWAY, I made these for a day of Sunday football (something I do not care to watch, but Meg is the sport Lesbian in our relationship, so while she watches sports, I make her snacks). She absolutely loved them, gave them a ⭐️⭐️⭐️⭐️⭐️ review, so now I’m sharing them with you!
There are a lot of recipes for Buffalo sauce out there, and I included a few notes for potential add-ins if you want to get even fancier in the “Notes” section of the recipe card, but my recipe is the SIMPLEST way to make Buffalo sauce. You can use this sauce to make buffalo wings, buffalo chicken sliders, buffalo cauliflower, a buffalo chicken salad… It’s literally three ingredients, and despite the fact that I’m not really a buffalo sauce fan at all, even *I* thought these were pretty darn good!
Why you’ll love this recipe
- It’s three ingredients. Four, if you count the thing you’re coating in the sauce (in this case, air-fried nuggets).
- You probably already have the ingredients. Butter, hot sauce, and honey. These are three ingredients you probably always keep stocked at home. So you won’t even need to go to the grocery store! Unless, of course, you don’t have chicken nuggets.
- It is made SO quickly. Seriously, all you need is 30 seconds to melt the butter, another 20 seconds to stir in the hot sauce and honey, and the time it takes to air-fry the nuggets (so, about 10 minutes).
- It’s low effort. If the bullet point above didn’t drive this point home for ya, let me say it again: this recipe takes virtually NO WORK! So it makes a perfect snack when you have the munchies.
Ingredients for Buffalo Chicken Bites
You only need four ingredients for this super easy recipe! Get ready for ’em!
- Frozen chicken bites. We are big fans of the “Just Bare” brand that we buy at Costco. They taste just like Chick Fil A, but without the homophobia!
- Hot Sauce. I’ve learned that Franks Red Hot is the way to go when it comes to making Buffalo sauce.
- Honey. A must, to balance out the heat of the hot sauce.
- Butter. Everything’s better with butter.
How to Make Hot Honey Chicken Bites
These are seriously so easy to make. Keep scrolling for the recipe card with exact measurements, but enjoy these photos and explanation anyway!
- Make the sauce. Melt the butter, then combine melted butter, hot sauce, and honey in a bowl and whisk until combined.
- Make the nuggets. Cook the nuggets according to package instructions. I like to use the air fryer cooking method! I set my air fryer to 370, cook for 9 minutes, then flip and cook another 4 minutes.
- Toss in the sauce. Add the nuggets to the bowl with the sauce and toss the nuggets.
- Serve and enjoy. Serve with ranch and some veggies for the ultimate munchie platter!
Recipe Variations and Substitutions
- Make it vegetarian: Replace the chicken nuggets with a plant-based alternative, like Impossible Chicken Nuggets, roasted cauliflower bites, Daring Gluten Free Plant Chicken Wings, or another similar product.
- Make it vegan: In addition to replacing the chicken nuggets with a plant-based alternative, replace the butter with a plant-based butter, and replace the honey with agave nectar.
- Add a little bit of spice: Add some smoked paprika, garlic powder, and a dash of Worcestershire sauce for even more depth of flavor to the buffalo sauce.
Storing and Reheating Buffalo Chicken Bites
If you have leftovers (which would be wild, because these are so good), you can store the sauced-up nuggets in an airtight container for 2-3 days. Reheat them in an air fryer for about 8 minutes at 370ºF, or you can place them on a parchment-lined baking sheet and bake at 350ªF for about 10 minutes until heated through. I would not microwave these nuggets.
You can also store the sauce in a jar with a lid in the refrigerator for up to 2 weeks. The sauce will harden in the refrigerator because of the butter, but just scoop out what you need from the jar and reheat the sauce over low heat in a small pan on the stovetop or in the microwave. If your sauce separates when you reheat it, just whisk it back together.

Instructions
- Cook the chicken bites. Cook the chicken bites according to package instructions. I like to air-fry my Just Bare chicken bites at 370 for 9 minutes, then flip and cook for 4 more minutes.
- Make the sauce. Meanwhile, combine the melted butter, hot sauce, and honey in a bowl and whisk until combined.
- Sauce up the nuggs. Add the cooked nuggets into the bowl with the sauce and toss the nuggets until perfectly coated in sauce.
- Serve and enjoy! Serve with your favorite dipping sauce, like ranch, and some crunchy veggies for the perfect munchies experience. Enjoy!
Notes
My Buffalo sauce is designed to be really simple and easy to make with pantry staples, but if you want to kick it up a notch, add a bit of garlic powder, smoked paprika, and a dash of Worcestershire sauce for an even deeper flavor.
